My Favourite Homemade Vegan Dressing! Creamy Lemon Tahini (Vegan, Gluten Free, Sugar Free, Soy Free, Nut Free)

My favourite salad to get anywhere is Urban Herbivore's salad bowl with their lemon tahini dressing. Maybe one day I'll get their kitchen secrets that won my heart and stomach over, but in the mean time, I'm making my own version at home. Since the first time I made this in my kitchen I've been craving it constantly. It's a nice change up from the light balsamic dressings that I'm used to throwing together at home! Whenever I make this dressing I just chop up whatever veggies I have in the fridge and toss it with some kale and mixed greens. In the salad I photographed for this post, I had some zucchini, bell pepper, onion, snap peas and GF croutons mixed in.

1/2 C tahini
3/4 C water (use more or less to bring to your desired dressing consistency)
3 tbsp lemon juice
1 tbsp apple cider vinegar
1 1/2 tbsp brown rice syrup
1 tsp garlic purée
1 tsp coconut aminos
1/4 tsp Herbamare sea salt

Mix everything together and enjoy!

PS - I find that this dressing tastes better the longer it sits in the fridge
